These are one of my favorite cookies. You can use milk chocolate or semisweet chocolate chips. We were given a big bag of semisweet chocolate chips last week, so I had to put then to good use!
If you like the cookies at restaurants that are baked in a skillet and severed with ice cream, then try baking a few of these cookies for about 4 to 5 minutes and put them directly into a bowel and top with reduced fat vanilla ice cream. Yum!
Reduced Fat Oatmeal Chocolate Chip Cookies
- 2 cups flour
- 1 tspn baking soda
- ½ tspn salt
- ¼ cup of buttery spread like Earth Balance Buttery Spread
- ¼ cup unsweetened applesauce
- ¾ cup light brown sugar
- ¾ cup granulated sugar
- 1 ½ tspn vanilla extract
- 1 egg and 2 whites
- 1 heaping cup of old fashioned oats (regular cook)
- 1 ½ to 2 cups of chocolate chips
- ½ to ¼ cup of chopped walnuts (optional)
Preheat oven to 375°F. Sift together flour, baking soda and salt. Set aside. In a large mixing bowel beat spread, sugars, applesauce and vanilla with an electric mixer until creamy. Add eggs and beat well.
Gradually add the flour mixture, beating well. Mix in oatmeal. Stir in chocolate chips and nuts. Drop by rounded tablespoons onto an ungreased cookie sheet.
Bake approximately 8 minutes or until edges start to slightly brown. Remove from cookie sheet onto a wire rack to cool. Makes about 40 cookies.
